Cheesy Baked Tomatoes

Ingredients

  • 3 Roma tomatoes
  • 1/2 tablespoon extra virgin olive oil
  • 1 small garlic clove, minced
  • 1/3 cup part-skim mozzarella cheese, shredded
  • Fresh basil, chopped
  • Salt, to taste

Instructions

  • Preheat oven to 400 degrees F.
  • Add the olive oil to a small bowl and add the minced garlic.
  • Clean and slice the tomatoes. Line a baking sheet with parchment paper and add the tomato slices.
  • Sprinkle the tomatoes with salt. Use a pastry brush to brush on the garlic infused oil.
  • Top the tomatoes with cheese then the fresh basil.
  • Bake for 7 minutes or until the cheese is melted.
