This is a delicious salad packed full of vegetables!
Green cabbage, red cabbage, shredded carrots, cucumber, green onions and cilantro topped with a peanut dressing.
This salad is low in points plus you earn points from all of the vegetables.

This easy salad pairs well with chicken, steak or fish. Or you can eat it by itself for a healthy and light lunch.
To keep this recipe low in points I used PB2 Powder instead of peanut butter. It’s powdered peanut butter that you add water to.
I know that may sound weird, but it’s actually really good.
It’s 5 points for 1/2 cup of PB2 Powder vs. 26 points for 1/2 cup of regular peanut butter. That’s a big difference!
How to make a Thai Chopped Salad with Peanut Sauce:
Chop, chop, chop! Cut up all of the vegetables and add them to a large bowl.
In a small bowl mix together the PB2 Powder, water, juice from one lime, rice vinegar, soy sauce and sugar.
Pour the dressing over the salad and mix it together. It’s that easy!
You can also add baked chicken breast to the salad to make a meal out of it. Or you could use a rotisserie chicken from the grocery store.
If you want to meal prep this salad I would keep the dressing separate until you’re ready to eat it.
Also, I removed the seeds from the cucumber. That way the salad doesn’t get soggy if I’m not eating it right away.
My kids loved this salad, and they thought it was so pretty. 🙂

- 1 cup shredded green cabbage
- 1 cup shredded red cabbage
- 1/2 cup shredded carrots
- 1/4 cup green onions
- 1/4 cup cilantro
- 1/2 English cucumber, cut in half, remove seeds then slice
- 1/2 cup PB2 Powder
- 1/4 cup water
- Juice from 1 lime
- 1 teaspoon rice vinegar
- 2 teaspoons low sodium soy sauce
- 1/2 teaspoon sugar

Chop all of the vegetables and add them to a large bowl.

In a small bowl mix together the PB2 Powder, water, lime juice, rice vinegar, low sodium soy sauce and sugar.

Pour the dressing over the salad and mix together.
