If you like western omelettes you’re going to love this Western Breakfast Bowl!
Not only is it a filling and delicious breakfast, it’s also great for meal prep.

For me eggs and potatoes are 0 points. If potatoes are not 0 points for you you can always reduce the amount of potatoes to lower the points.
What you need to make Western Breakfast Bowls:
- Eggs
- Green pepper
- Onion
- Diced ham
- Frozen hash browns
- Reduced fat cheddar cheese
To make this recipe even easier I used Ore Ida diced hash browns, no need to peel and dice the potatoes.
Instead of cooking the potatoes in oil I used a nonstick pan and cooking spray, that helped to save points.
To make the Western Breakfast Bowls I started with the potatoes since they take the longest to cook.
I cooked the potatoes with the onion. I like my green pepper to still be a little crunchy so I added it the last 3 minutes of the potatoes cooking. I also added the ham at that point.
When the potatoes were done cooking I topped them with the cheddar cheese and moved them to the side. Then I added the eggs to the pan to cook those as well.
Once the eggs were done I added everything to a bowl.
That’s all there is to it! It’s an easy breakfast with only one pan to clean.
If you want to use this recipe for meal prep simply double or triple the recipe. Keep it in an airtight container in the fridge and heat it up in the microwave when you’re ready for it.

Yield: 1 serving

- 1 cup Ore Ida country hash browns
- 2 tablespoons yellow onion, chopped
- 1/4 cup green pepper, chopped
- 1/4 cup diced ham
- 2 tablespoons reduced fat cheddar cheese, shredded
- 2 eggs, scrambled
- Salt and pepper, to taste

Spray a large pan with olive oil and add the potatoes and onions. Season with salt and pepper. Cook the potatoes for 10 minutes. Add the green pepper and ham during the last 3 minutes.

Sprinkle the cheese over the potatoes and push to the side. Add the eggs to the pan and season with salt and pepper. Once the eggs are fully cooked add everything to a bowl.
