This Jalapeno Popper Chicken Salad has all of the delicious flavors of a jalapeno popper!
It tastes great in a lettuce wrap or on low point bread.
It’s only 3 points per serving for blue and purple, 5 points for green.

Personally I love jalapeno poppers. I was at a birthday party over the weekend and they had them. Of course they were delicious!
So I thought why not take all of the flavor of a jalapeno popper and turn it into a chicken salad!?
Let me tell you, it was a great idea!
Here’s what you need for Jalapeno Popper Chicken Salad:
- Cooked chicken breast
- Center cut bacon
- Reduced fat shredded cheddar cheese
- Jalapeno
- Scallions
- Light mayonnaise
- Garlic powder, salt and pepper
This is a perfect recipe for buying a cooked rotisserie chicken from the grocery store. It’s a great time saver.
The one thing that isn’t in this recipe that I usually put in jalapeno poppers is cream cheese. Instead I used reduced fat mayonnaise.
My jalapeno poppers usually include cheddar cheese, scallions, garlic powder and they’re wrapped in bacon. Yum!
I used two slices of Oscar Mayer center cut bacon which was 2 points.
Although there is a jalapeno in this chicken salad it’s not spicy. I removed all of the seeds so there’s just the flavor of the jalapeno.
As far as making the Jalapeno Popper Chicken Salad it’s as simple as chopping everything up and mixing it together. It’s ready in just minutes.

Yield: 4 servings (Each serving is 1/2 cup. 3 points per serving for blue and purple, 5 points for green.)
- 2 boneless, skinless chicken breasts, cooked
- 2 slices center cut bacon, cooked and chopped
- 2 tablespoons reduced fat cheddar cheese, shredded
- 1 jalapeno, seeds removed and chopped
- 2 scallions, chopped
- 1/3 cup reduced fat mayonnaise
- 1/8 teapoon garlic powder
- 1/8 teaspoon salt
- Pinch of pepper

Add all of the ingredients to a mixing bowl and stir together.

Serve in lettuce wraps or on low point bread.
