Frozen S’mores

These Frozen S’mores are a delicious low point treat!

They remind me of an ice cream sandwich with a S’mores flavor.

Who doesn’t love S’mores in the summer? Since these are frozen they’re perfect on a hot day.

I’ve seen a few recipes on Pinterest for Frozen S’mores. They all used chocolate pudding for the chocolate layer. I used sugar free chocolate pudding to lighten it up.

For the marshmallow layer most of the recipes used marshmallow fluff, cream cheese and Cool Whip.

I decided to skip the marshmallow fluff and cream cheese, the marshmallow layer is just Cool Whip.

Technically there is no marshmallow in the marshmallow layer, but it’s still really good.

Making the Frozen S’mores is really easy, it just takes time to freeze.

I started by making the chocolate pudding, then I lined an 8×10 baking dish with parchment paper and poured it in. Smooth it out so it’s a nice even layer.

Put the baking dish in the freezer for about an hour. Once the chocolate pudding is somewhat frozen you can add the Cool Whip.

Spread the Cool Whip so it’s also in an even layer, then put it back in the freezer.

Once the pudding and Cool Whip are frozen you can add the graham crackers. I put the graham crackers on the top layer then put a baking sheet over the top and flipped it.

Then I added graham crackers to the bottom side and cut them.

I always have the hardest time trying to figure out how to calculate graham crackers. The app says 2 squares of graham crackers is 2 points. So is that one sheet cut in half? Because a whole sheet is a rectangle. 🙂

So this time I scanned the box of graham crackers using the barcode scanner. It said 8 crackers was 5 points. The nutritional info on the graham cracker box said 8 crackers is 2 full sheets. I felt like I cracked a mathematical code and should win an award!

Once all of the S’mores are cut I wrap them up individually and keep them in the freezer. Since they’re frozen they stay good for a while.

The best part is they’re only 2 points each for blue, green and purple!

Frozen S’mores

Yield: 24 servings (2 points per serving for blue, green and purple)

Ingredients
  • 12 graham cracker sheets
  • 1 box sugar free chocolate pudding mix (1.4 oz. box)
  • 2 cups fat free skim milk
  • 6 oz. fat free Cool Whip
Instructions
  1. Stir together the pudding mix and milk. Let it sit 5 minutes to thicken.

  2. Line an 8×10 baking pan with parchment paper. Evenly spread the pudding in the bottom of the baking pan.

  3. Put the pudding in the freezer 1 hour or until it is frozen.

  4. Spread the Cool Whip evenly over the pudding. Put back in the freezer until it is frozen.

  5. Break up the graham crackers into 48 pieces. Spread 24 graham crackers over the top of the frozen Cool Whip. Place a baking sheet over the baking pan and flip over. Remove the parchment paper and add the remaining 24 graham crackers. Carefully cut into 24 pieces.
