Even though I don’t feel like I’m “dieting” with Weight Watchers, sometimes I wish I could have certain things….like an ice cream sandwich. Well, now I can! This ice cream sandwich is only 2 Freestyle points.

I went to the grocery store today planning to buy a watermelon. I’ve been researching different watermelon salads and I wanted to test out my own. Would you believe they were OUT of WATERMELONS!?
I guess I’m not too surprised since it’s Memorial Day weekend, but wouldn’t you stock up knowing that it’s Memorial Day weekend!?
I guess it worked out for the best because I ended up grabbing some chocolate graham crackers and Halo Top ice cream. I’ve been wanting to make some ice cream sandwiches, so today was the day.
Guess what? They turned out even better than I thought they would! I’m a firm believer that everything happens for a reason. These ice cream sandwiches are my reason today!
They’re only 2 Freestyle Points per sandwich, but they are smaller in size than the usual ice cream sandwich. I’m okay with that. They taste great and I get my ice cream sandwich fix.

I’ve tried a lot of the Halo Top ice creams. Some of them I absolutely love. I think the peanut butter cup is my favorite. Today was the first time I tried cookies and cream. I wasn’t a huge fan of it by itself. I was a little worried that I should’ve grabbed a different flavor.
But, it was delicious with the ice cream sandwich! The cookies and cream ice cream with the chocolate graham crackers were perfect together.
I let my ice cream sandwich sit for about 5 minutes when I took it out of the freezer. That let the ice cream melt a little and get the graham cracker a little soft. Just like an ice cream sandwich!
Here are a few of the things I used:
After unsuccessfully trying to break a few of the graham crackers I ended up using a knife. I just set the knife along the perforated edge and pushed down. It worked perfectly!





Yield: 6 Servings (2 points (blue, green and purple) for 1 ice cream sandwich)

- 3 chocolate graham cracker sheets (I used Kroger brand)
- 1 cup Halo Top Cookies & Cream ice cream

Let ice cream sit at room temperature for 10 minutes, or until it is soft and easy to work with.

Break chocolate graham crackers in half, then half again.

Line the bottom of a small baking dish with 6 pieces of chocolate graham crackers.

Evenly spread 1 cup of Halo Top Cookies & Cream ice cream on the chocolate graham crackers, then layer the other 6 chocolate graham crackers on top.

Freeze for at least 1 hour.

Cut and serve!
