These Brownie Ice Cream Sandwiches are a perfect sweet treat. Whether you follow Weight Watchers blue, green or purple, they are only 2 points each!
I made the brownies using Pillsbury sugar free brownie mix. Instead of using any oil or eggs I used Diet Coke.
If you haven’t made cake or brownies this way I know it might sound weird, but trust me…it’s delicious!
You won’t even be able to tell a difference. The first time I did it I had my kids try it and they had no idea.

I used Halo Top ice cream for the filling. I like the ice cream plus it’s low in points. Win win!
I’m going to tell you how I made the Brownie Ice Cream Sandwiches. It might “sound” complicated, but it really isn’t.
To make the brownies I put the brownie mix in a bowl and added 12 oz. of Diet Coke. I mixed it with a spoon, 50 strokes.
I poured it into an 8×8 baking pan that I sprayed with non-stick cooking spray. The bake time is the same as what it says on the box, 28-32 minutes.
Make sure the brownies are cooked all the way by inserting a toothpick into the center. Once it comes out clean you are good to go.
Now the important part, make sure you let the brownies cool all the way. If you don’t they will be too crumbly.
I used a mini muffin pan to hold the brownies into place. It’s the perfect size for the 1 1/2 inch cookie cutters that I used to cut out the brownies.
Before I started cutting the brownies I took the ice cream out of the freezer to soften.
Using the cookie cutter I cut out 20 circle brownies. They are kind of thick so after I cut out the brownie I cut each one in half horizontally. That gives you a perfect brownie sandwich.
I added the bottom parts of the brownie to the mini muffin pan, then I used a small spoon to add ice cream to each brownie.
Next I put the brownie tops onto each brownie. I covered the pan and then popped them in the freezer.
You’ll want to leave them in the freezer for at least one hour. These Brownie Ice Cream Sandwiches are great to have on hand for when you want something sweet, plus you can keep them in the freezer for weeks!

Yield: 20 (each one is 2 points for blue, green and purple.
- 1 box Pillsbury sugar free brownie mix
- 12 oz. Diet Coke
- 1 cup Halo Top ice cream

Preheat oven according to the directions on the brownie box.

Add the brownie mix to a large mixing bowl, then add the Diet Coke. Use a spoon and stir it 50 strokes.

Spray an 8×8 baking ban with no-stick cooking spray, then and the brownie batter. Put it in the oven 28-32 minutes, or until a toothpick inserted in the center comes out clean.

Let the brownies cool completely.

Use a 1 1/2 inch circle cookie cutter to cut out 20 brownies.

Use a knife to cut each brownie in half horizontally.

Add the bottom half of the brownies to a mini muffin pan.

Add a small spoonful of ice cream to each brownie, then cover it with the brownie top.

Cover the brownies and put in the freezer for at least 1 hour. Then, enjoy!
