Beware…this is dessert is absolutely delicious!!
Obviously that is not a problem. BUT, you will need self-control! I seriously could have eaten this whole pan of brownies!
There is something about the “nougat”, caramel and peanuts that is so good! I could eat a tablespoon of that by itself as a treat.
There are 12 servings to these brownies, each one is 6 Freestyle points. I think that’s pretty good considering all of the sweet deliciousness you get. It’s worth every single point!

The brownies are made using Pillsbury sugar-free brownie mix and Diet Coke. You don’t use any eggs or oil, just the brownie mix and Diet Coke. Where I’m from we call it “pop” but I thought I would be a little more specific as far as the brand. 🙂
The brownie batter might seem runnier than what you’re used to when you use Diet Coke, but don’t worry. They will bake into delicious brownies!
To make the nougat layer I mixed together marshmallow creme and PB2 powder. I added some water to the PB2 powder first.
The nougat layer acts as the frosting. I drizzled 2 tablespoons of sugar-free caramel to the nougat and added crushed peanuts to the top.

If you have leftovers I recommend putting them in the fridge. That will help keep the nougat layer on the brownie.

Yield: 12 servings (6 points per serving for blue, green and purple)
- 1 box Pillsbury sugar-free chocolate brownie mix
- 12 oz. Diet Coke
- 6 oz. marshmallow creme
- 2 tablespoons PB2 Powder
- 1 tablespoon water
- 2 tablespoons sugar-free caramel sauce
- 2 tablespoons peanuts

Preheat oven to 350 degrees F.

Add brownie mix and Diet Coke to a mixing bowl. Stir 50 strokes with a spoon.

Spray an 8×8 baking pan with no-stick cooking spray. Add the brownie batter and put in the oven 28-32 minutes.

Remove brownies from oven and let cool completely.

Mix together PB2 Powder and water, then add the marshmallow creme a little at a time, while mixing together.

Spread mixture evenly over brownies.

Drizzle 2 tablespoons of sugar-free caramel on top of the nougat.

Place peanuts in a sealed zip up bag. Use a meat mallet to break the peanuts into small pieces. Sprinkle the peanuts onto the brownies.
