This Shrimp Ceviche is zero points for blue and purple! It’s only 1 point for green.
It’s perfect for lunch, a snack or even an appetizer.
After indulging in some not so point friendly foods over the weekend, this was the perfect lunch for me.

I served my Shrimp Ceviche with baked tortilla chips. I used the Ole Xtreme high fiber tortillas which are only 1 point each. Altogether my lunch was only 1 point.
Typically Shrimp Ceviche has avocado in it but I left that out to keep it zero points.
It’s also usually made with raw shrimp or fish that is cooked by the lime juice. I chose to use cooked shrimp.
I kind of cheated and bought shrimp cocktail. It was only $9.99 for 1 pound and the shrimp was already cooked.
The only thing I had to do was peal the shell off the tail, then chop up the shrimp.
My Shrimp Ceviche also had tomatoes, cucumber, red onion, jalapeno, cilantro, lemon juice, lime juice, salt and pepper.
I did not use the seeds of the jalapeno, but if you want it spicy you can add them.
This recipe is as simple as chopping the ingredients, mixing them together and refrigerating it for 30 minutes.
Besides serving it with tortilla chips you can also turn it into a wrap or put it over a tostada shell.

Yield: 3 servings (0 points per serving for blue and purple, 1 point per serving for green)
- 1 lb. cooked shrimp, peeled, deveined and chopped
- 1 cup cucumber, chopped
- 1 cup tomatoes, chopped
- 1 jalapeno, chopped
- 2 tablespoons red onion, chopped
- 1/2 cup cilantro, chopped
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Add all of the ingredients to a non-reactive mixing bowl such as glass. Stir together then refrigerate for 30 minutes.
