Greek Couscous Salad

This Greek Couscous Salad is a light and delicious side dish that’s also low in points!

A one cup serving is only 3 points for blue and purple, 5 points for green.

For green you could lower the points by using less chickpeas. 15 oz. of chickpeas is 10 points with green but they are 0 points for blue and purple.

This recipe is incredibly easy but full of flavor. The dressing is a combination of olive oil, red wine vinegar and fresh lemon juice.

For seasonings I simply used dill, salt and pepper.

It’s also full of fresh vegetables:

I bought instant couscous for this recipe. You simply bring water or broth to a boil, stir in the couscous, put a lid on the pan and let it sit for 5 minutes. Fluff it with a fork after the 5 minutes is up.

Make sure your couscous is cooked for this recipe. I made the couscous first, then started chopping my vegetables. That gave the couscous time to cool off.

The most time consuming part of this recipe is cutting the vegetables, but it really doesn’t take long. I chopped the cucumber, cut the cherry tomatoes in half and chopped the onions in a matter of minutes.

After that I put all of the ingredients in a bowl and stirred it all together. That’s it! You can eat it right away or put it in the fridge for a couple of hours.

Yield: 7 servings (Each serving is 1 cup which is 3 points for blue and purple, 5 points for green)

Ingredients
  • 2 cups cooked couscous
  • 1 cup cucumber (minus seeds), chopped
  • 10 oz. cherry tomatoes, cut in half
  • 15 oz. chickpeas
  • 1/2 cup reduced fat feta cheese
  • 2 tablespoons red onion, chopped
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dill
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
Instructions
  1. Add all of the ingredients to a bowl and stir together. Serve right away or cover and refrigerate for a couple of hours.
