This Chicken Piccata is delicious!
Not only does it taste good but it’s also low in points. Only 3 points per serving for blue and purple, 5 points for green.
It tastes delicious on its own or with pasta. Since it’s so low in points it’s perfect to pair it with a small side of pasta.

You’ll want to use thin chicken breasts for this recipe. I bought mine sliced thin but if you have regular size chicken breasts you want to cut them in half.
Make sure that all of the chicken breasts are the same thickness so that they cook evenly.
The recipe calls for 1/4 cup of flour but you will only use 2 tablespoons worth. When I calculated the points I entered 2 tablespoons for the flour.
I use a half cup of dry white wine for the chicken piccata, which is 4 points.
If you don’t want to use wine you can substitute it with chicken broth. Personally I think the wine gives it such a delicious flavor it’s worth the points.
The main way I lightened up this chicken piccata was by not frying it in oil. I used olive oil cooking spray that was 0 points.
I sprayed the pan with olive oil spray then sprayed both sides of the chicken breasts.
Adding garlic powder, salt and pepper to the flour gave the chicken lots of flavor. Plus the chicken finishes cooking in the sauce.
After you cook the chicken and remove it from the pan you want to make the sauce in the same pan. The leftovers from the chicken cooking give the sauce so much flavor.
My daughter loved the sauce so much she asked me to make more to put over her noodles. I made the extra sauce in a clean pan and it wasn’t the same. It was still good, but you could definitely tell a difference.
Overall this is an easy recipe that’s great for busy weeknights, but it’s also impressive enough to serve for Sunday family dinner.

Yield: 4 servings (3 points per serving for blue and purple, 5 points for green)

- 1 lb. boneless, skinless chicken breasts
- 1/4 cup all purpose flour
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- Olive oil cooking spray
- 1 tablespoon butter
- 1 clove garlic, minced
- 1/2 cup dry white wine
- Juice from one lemon
- 2 tablespoons capers (liquid drained)
- 1 tablespoon fat free half and half
- Salt and pepper, to taste

Whisk together the flour, garlic powder, salt and pepper in a shallow dish.

Dredge both sides of the chicken in the flour mixture.

Put a pan over medium heat and spray with olive oil spray. Add the chicken and cook 4 minutes.

Spray the other side of the chicken with olive oil spray and flip. Cook an additional 3-4 minutes or until the chicken is cooked through.

Remove the chicken from the pan and cover with foil.

Add the butter to the pan. Add the minced garlic once the butter has melted. Cook for 30 seconds making sure not to let the garlic get brown.

Add the wine, lemon juice, half and half and capers. Let simmer for 3 minutes then add the chicken back into the pan. Check to see if it needs any additional salt and pepper.
