If you like shrimp scampi you need to try this chicken scampi!
I was curious how many points regular chicken scampi was. According to the WW app, the chicken scamp from Olive Garden was 41 points!!
My chicken scampi recipe is much lower in points. It’s 8 points per serving for blue and purple, 9 points for green.

Even though this chicken scampi is much lower in points it is still full of flavor!
Those points include all of the pasta you see in the picture above.
The main thing I did to reduce the points in this chicken scampi was to use less butter. I only used 1 tablespoon of butter.
Some chicken scampi recipes use a whole stick of chicken!
I used chicken tenders for this recipe but you could also use chicken breasts. I started by mixing together flour, Italian seasoning, salt and pepper then dredging the chicken in it.
That helps give the chicken a delicious flavor. I sprayed a non-stick pan with olive oil and cooked the chicken. Once the chicken was fully cooked I removed it from the pan and set it aside.
While the chicken was cooking I boiled the angel hair pasta. It only takes about 4 minutes.
In the same pan that I cooked the chicken I melted 1 tablespoon of butter. Then I added the minced garlic and let that cook for about 30 seconds.
Then I added the wine and chicken broth to the garlic. I brought it to a simmer and let it cook for 5 minutes then I added the half and half and fresh lemon juice.
I added the angel hair pasta and parmesan cheese to the sauce and tossed it together, then added the chicken.
I’ve made this two times in the last week because my kids and I are obsessed with it!

Yield: 4 servings (8 points per serving for blue and purple, 9 points for green)

- 1 lb. skinless chicken tenders
- 1/4 cup all purpose flour
- 1 tablespoon Italian seasoning
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 6 oz. angel hair pasta
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 2 tablespoons fat free half and half
- 1 tablespoon fresh lemon juice
- 1/4 cup Parmesan cheese, shredded

Add the flour, Italian seasoning, salt and pepper to a bowl and stir together. Dredge the chicken in the flour.

Heat a non-stick pan on medium heat. Spray with olive oil then add the chicken. Cook for 4 minutes on each side.

While the chicken is cooking boil and drain the angel hair pasta.

Remove the chicken from the pan and cover with foil.

Melt the butter in the same pan the chicken was cooked and add the minced garlic. Cook for 30 seconds.

Add the wine and chicken broth to the garlic. Bring to a light simmer and cook for 5 minutes.

Turn off the heat and add the half and half and lemon juice. Add the angel hair pasta and Parmesan cheese and toss together. Check to see if it needs more salt and pepper. Add the chicken and serve.

Looks good. Could you substitute coconut milk for half and half? I have lactose intolerant in house
I’m not too familiar with coconut milk so I’m not sure if it would change the flavor. I have made it without the half and half (because I didn’t have it) and it was still delicious!
You mention parmesan cheese but I don’t see it in the ingredients list. How much do you use?

Do you determine portion size by weighing it all and dividing it? This is where I have trouble. Especially when it’s a casserole or something. On WW, they will say 1/3 slice… what does that even mean? I also wondered why they didn’t give a weight. Sorry I should probably ask this in my group.
