I love casseroles! They’re usually easy to make and don’t make much of a mess.
This casserole fits into both of those categories, plus it’s cheesy!!
If you like chicken, cheese, broccoli, cauliflower and Ritz crackers you’re going to want to try this.

There are a few things I did to make this casserole low in points. The first was I used cauliflower rice instead of regular rice. That saved 10 points.
I used reduced-fat Mexican cheese instead of regular Mexican cheese. You could also use reduced-fat cheddar cheese. I tend to buy the Mexican cheese because it’s easier for me to find.
Instead of using regular mayonnaise I used light mayonnaise. I couldn’t tell a difference at all. If you want it even lower in points you can use fat free Greek yogurt in place of the mayonnaise.
If you’re running short on time you can use a cooked rotisserie chicken for this recipe. I had some chicken tenderloins I needed to use so I seasoned them with garlic powder, onion powder, salt and pepper then baked them.
Once the chicken was done I cut it into bite size pieces and it was ready to go.
You can use frozen broccoli and cauliflower rice for this recipe, but you want to either let it thaw first or cook it. If you use it frozen in the casserole it will make the casserole very watery.
To assemble the casserole I mixed everything together, poured it into a casserole dish, topped it with more cheese and crushed Ritz crackers. I used reduced-fat Ritz crackers instead of the regular ones.
My picky daughter doesn’t like casseroles, but she loves this. She says it’s the only casserole she likes. It’s shocking to me because I would have hated this when I was her age, but she loves cauliflower. 🙂

Yield: 4 servings (5 points per serving for blue and purple, 7 points for green)
- 1 lb. cooked boneless, skinless chicken breast
- 10 oz. cauliflower rice (if it's frozen either thaw or cook it first)
- 12 oz. chopped broccoli (if it's frozen either thaw or cook it first)
- 1/4 cup light mayonnaise
- 1 egg
- 1 cup reduced-fat Mexican cheese, divided
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon seasoning salt
- 1/4 teaspoon pepper
- 8 reduced-fat Ritz crackers

Preheat oven to 350 degrees F.

Add the chicken, cauliflower rice and broccoli to a large bowl. Whisk the egg and add it to the bowl. Also add the mayonnaise, 1/2 cup cheese, garlic powder, onion powder, seasoning salt, and pepper. Stir together.

Spray a 2 quart casserole dish and add the chicken mixture. Top the casserole with the other 1/2 cup of cheese.

Place the Ritz crackers in a zip up bag and use a meat tenderizer or rolling pin to turn them into crumbs. Sprinkle over the casserole.

Bake for 30 minutes. Enjoy!
