This falafel recipe can be cooked in the air fryer or baked in the oven!

The key to making this falafel is using a food processor. It helps to break down the chickpeas and all of the other ingredients.
One thing I love about falafel is there are so many ways you can eat it. I love eating it with tzatziki sauce. If you’re looking for a low point tzatziki sauce you can check out my Deconstructed Chicken Gyro recipe.
You can also put it in a pita, make it into a wrap or eat it on a salad.
Falafel is also a great vegetarian option.

I like to make falafel in the air fryer but you can also bake it in the oven.
Another great thing about falafel is it’s low in points. You can have five for only 1 point with blue and purple, with green you can have two for 3 points.
The big difference with green is that chickpeas aren’t 0 points.
What makes regular falafel higher in points is that it’s typically fried in oil.
When I was in high school my friend made me falafel for the first time. It was made out of a box….and I hated it! I didn’t try it again for many years.
The main thing I love about falafel is the fresh cilantro and parsley. It makes the recipe so much better than buying a box!

Yield: 10 (5 per serving for blue and purple is 1 point, 2 per serving for green is 3 points)
- 1 (15 oz.) can chickpeas
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 cup cilantro
- 1/2 cup parsley
- 2 tablespoons all purpose flour
- 1 teaspoon cumin
- 1/4 teaspoon cayenne (omit if you don't want it spicy)
- 2 tablespoons lemon juice

Drain and rinse the chickpeas. Lay on a towel and dry off.

Add all of the ingredients (except for the flour) to the food processor. Process until the mixture is broken down. Add the flour and pulse to combine.

Preheat the air fryer to 350 degrees.

Form the falafel into 10 patties. Spray the air fryer with olive oil spray then add 5 of the patties. Spray the falafel with olive oil spray.

Cook the falafel for 15 minutes, turning half way through.

Bake 15 minutes (or unil golden brown) turning and spraying half way through.
