This Cinnamon Granola is the perfect addition to yogurt!
I like adding granola and fruit to my yogurt. It’s such a filling and healthy breakfast.
There are so many other ways you can use granola. You can eat it by itself for a crunchy snack, add it to a salad or top a dessert with it.
Another idea is to add dried fruit to the granola.
I used 1/4 cup of almonds for my granola but you can use any type of nut you’d like. Cashews and pecans would be good too. Just make sure you check the points.

Overall this is a really easy recipe. The first thing I did was roughly chopped the almonds.
I added the almonds and rolled oats to a mixing bowl. I also added the cinnamon, salt and sweetener. I used Splenda but you can use whichever sweetener you prefer.
In another small bowl I added the honey, vegetable oil and vanilla.
Then I drizzled the honey mixture over the oats and stirred it together really well.
I baked it for 20 minutes, stirring it half way through. Then I let it cool and it was ready to eat!
It makes 8 (1/4 cup) servings. Any leftovers can be stored in an air tight container.

Yield: 8 (1/4 cup) servings – 2 points for purple, 3 points for blue and green
- 1 1/2 cups rolled oats
- 1/4 cup almonds
- 3/4 teaspoon cinnamon
- 2 tablespoons granulated Splenda
- 1/4 teaspoon salt
- 2 tablespoons honey
- 1 teaspoon vegetable oil
- 1/2 teaspoon vanilla extract

Preheat oven to 325 degrees F.

Roughly chop the almonds. Add the almonds, rolled oats, cinnamon, Splenda and salt to a large mixing bowl. Mix together.

In a separate bowl add the honey, oil and vanilla extract. Stir together then pour over the oat mixture and stir thouroughly.

Line a baking sheet with parchment paper. Pour the granola onto the baking sheet and spread out. Bake for 20 minutes stirring half way through.

Remove from the oven and let cool completely.
