Weight Watchers Falafel

Yield: 10 (5 per serving for blue and purple is 1 point, 2 per serving for green is 3 points)

Ingredients

  • 1 (15 oz.) can chickpeas
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup cilantro
  • 1/2 cup parsley
  • 2 tablespoons all purpose flour
  • 1 teaspoon cumin
  • 1/4 teaspoon cayenne (omit if you don't want it spicy)
  • 2 tablespoons lemon juice

Instructions

  • Drain and rinse the chickpeas. Lay on a towel and dry off.
  • Add all of the ingredients (except for the flour) to the food processor. Process until the mixture is broken down. Add the flour and pulse to combine.

For the air fryer:

  • Preheat the air fryer to 350 degrees.
  • Form the falafel into 10 patties. Spray the air fryer with olive oil spray then add 5 of the patties. Spray the falafel with olive oil spray.
  • Cook the falafel for 15 minutes, turning half way through.

Baking in the oven:

  • Preheat oven to 350 degrees.
  • Form the falafel into 10 patties. Spray a baking sheet with olive oil spray then add the falafel patties. Spray the patties with olive oil spray.
  • Bake 15 minutes (or unil golden brown) turning and spraying half way through.
