Every day is a good day for macaroni and cheese!
This lightened up version won’t cost you nearly as many points as the regular recipe.
If you follow MyWW purple this Baked Macaroni and Cheese with Broccoli is only 3 points per serving. That’s because I used whole grain pasta which is 0 points for purple.
If you are on blue or green it will cost you 6 points per serving, still not bad for macaroni and cheese!

I cut way back on the flour for this recipe, I only used 1 tablespoon.
To make sure the cheese sauce was thick enough I did half milk, half fat free Greek yogurt.
My kids don’t usually eat recipes I make with fat free Greek yogurt, they just don’t like it.
Naturally, I didn’t tell them I used it in this recipe. ๐ They both loved it!
I also didn’t mention I used whole grain pasta. When they were done eating (and both said it was really good) I let the cat out of the bag.
My younger daughter let out a gagging noise and said she could taste the grain in her mouth.
She’s a slightly dramatic 13 year old…but she liked it!!
Sometimes it helps to hide the truth. If I would have told her what was in this recipe before she tried it she wouldn’t have eaten it. That’s a mom win!

Yield: 8 (1 cup) servings (3 points per serving for purple, 6 points per serving for green and blue)
- 10 oz. whole grain rotini pasta
- 3 cups steamed broccoli florets
- 1 tablespoon all purpose flour
- 1 cup fat-free chicken broth
- 1 cup skim milk
- 5 oz. fat-free plain Greek yogurt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 2 cups reduced-fat sharp cheddar cheese, shredded
- 1 teaspoon Italian breadcrumbs

Preheat oven to 350 degrees F.

Cook pasta according to the directions on the box. (Cook the least amount of time since you will also be baking it. My pasta said cook 8-10 minutes, so I did 8.)

Add a couple of tablespoons of chicken broth to the flour and whisk together. Add it to a large saucepan and whisk in the remaining chicken broth. Whisk in the Greek yogurt and skim milk. Let the mixture simmer for 5 minutes, until the sauce thickens.

Turn off heat and add the sharp cheddar cheese. Stir until melted then add the noodles and broccoli.

Spray a casserole dish with no-stick cooking spray and add the macaroni and cheese. Sprinkle breadcrumbs over it, then spray breadcrumbs with no-stick cooking spray. Bake for 20 minutes.
