I love making dinner in the Instant Pot. It’s by far my favorite kitchen gadget.
If you have been thinking about buying one, I highly recommend it. I usually use mine at least 3 times a week.
This is the Instant Pot I have.

This chicken Parmesan pasta in the Instant Pot only cooks for 5 minutes. Of course it takes a few minutes for the Instant Pot to come to pressure, but overall this meal is ready in less than 30 minutes.
If you don’t have an Instant Pot you could try making this Chicken Parmesan Casserole. It’s 6 points per serving if you include the pasta.
Another great thing about cooking this meal in the Instant Pot is you only dirty one dish. That’s because you cook the pasta in it too.
I used 2 chicken breasts that I cut into bite size pieces. The chicken breasts weighted 13 oz, so a little less than a pound of chicken.
I started the recipe by turning the Instant Pot to saute, then I sprayed with no-stick oil and added the chicken and fresh minced garlic. I seasoned the chicken with salt and pepper.
Cooking the chicken with the garlic gives it so much flavor. You definitely don’t want to skip that step.
After the chicken cooks for a couple of minutes you can turn the Instant Pot off.
I used tomato sauce for this recipe instead of spaghetti sauce. That’s because it’s 0 points. I added seasonings to it to give it flavor.
I added the tomato sauce to the pot, over the chicken. Then I added the pasta, followed by 1 cup of water.
I used a spoon and pushed the pasta down into the liquid as much as I could. Then I locked the lid and set it to manual high pressure for 5 minutes.
Once it was done cooking I released the pressure, took off the lid and stirred it up. Then I stirred in the shredded Parmesan cheese.
I sprinkled the mozzarella cheese on top and put the lid on for a minute so the cheese would melt.
You can stir in the mozzarella cheese if you would like, but I like to leave it melted on top.
That’s it! Dinner was done in less than 30 minutes.

Yield: 6 servings (6 points per serving following myWW blue and purple, 7 points green.)
- 2 boneless, skinless chicken breasts (a little under 1 lb.)
- 1 clove garlic, minced
- No-stick cooking spray
- Salt and pepper, to taste
- 15 oz. tomato sauce
- 1 teaspoon dried minced onion
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 8 oz. penne pasta, uncooked
- 1 cup water
- 1/4 cup Parmesan cheese, shredded
- 1 cup mozzarella cheese, shredded

Cut chicken into bite size pieces.

Turn the Instant Pot to saute. Spray with no-stick cooking spray and add the chicken and minced garlic. Add a pinch of salt and pepper to the chicken. Let the chicken cook until it is no longer pink on the outside. Turn off the Instant Pot.

In a small bowl stir together the tomato sauce, dried minced onion, Italian seasoning, oregano, basil, salt and pepper.

Pour tomato sauce over the chicken. Add the uncooked pasta, then pour the water over the noodles.

Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 5 minutes.

Once the time is up do a quick release of pressure. When the steam is released carefully remove the lid.

Add the shredded Parmesan cheese and stir.

Add the mozzarella cheese and place the lid on the Instant Pot until the cheese melts.
