I have been craving a tasty gnocchi dish lately. The only problem was I didn’t want it to be too high in points.
So I started thinking about what I could do to make a gnocchi dish that I liked, while keeping it low in points.
That’s when I came up with this gnocchi with chicken and spinach.
It has a cream sauce, gnocchi, chicken and spinach. Between the gnocchi and chicken it is a very filling dish and only 6 Freestyle points per serving.
This is the gnocchi that I bought:
I found it with the dry pasta. I used the WW bar code scanner to find out the points.
For the first time ever….the wrong food showed up on my scanner! It came up as waffles. I was like huh…this definitely isn’t waffles.
Not a big deal, I just created my own food in the WW app. This particular gnocchi came out to 5 points per serving, and there are 4 servings total.
I feel like I always say this, but you definitely want to always double check the points in your recipe. Different brands can change the point total in a recipe.
To make this recipe even easier I bought a rotisserie chicken. This recipe was done in less than 30 minutes!
I also bought fresh baby spinach and had fresh garlic cloves (minced using my favorite garlic press).
For the creamy sauce I used fat-free chicken broth, fat-free half and half and cornstarch.
I started the recipe by cooking the gnocchi. It only took 2-3 minutes, then I drained the water.
While the gnocchi was cooking I started to saute the garlic. I sprayed some no-stick olive oil spray into a heated cast iron skillet, and added the minced garlic. I let that cook for one minute, making sure to not let it burn.
(If you don’t have a cast iron skillet you can use a frying pan.)
Next I added 1 cup of chicken broth to the garlic, then I added the spinach. I let that cook a couple of minutes.
Then I added the half and half and stirred it.
I added the cornstarch to a couple tablespoons of chicken broth and added that to the pan. I also added salt, pepper, and dried minced onion.
I let the sauce simmer for 5 minutes (while stirring), until the sauce had thickened and reduced some. Then I added the chicken and gnocchi and mixed it together.
That’s it! Dinner was served. 🙂
Yield: 4 servings (5 points per serving for blue, green and purple)
- 16 oz. gnocchi
- 1 rotisserie chicken (only use the chicken breasts)
- 2 garlic cloves, minced
- No-stick cooking spray
- 1 cup fat-free chicken broth
- 2 cups fresh baby spinach
- 1/2 cup fat-free half and half
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 teaspoon dried minced onion
- 1 tablespoon cornstarch
- Optional: red pepper flakes and grated Parmesan cheese. Add additional points for the Parmesan cheese.
Cook gnocchi according to the directions on the box. Drain and set aside.
Heat a cast iron skillet (or frying pan). Spray with no-stick cooking spray and add the garlic. Saute the garlic for 1 minute, making sure the garlic doesn’t burn.
Add the chicken broth and the spinach. Cook for a few minutes, until the spinach is cooked.
Add the half and half, stir. Bring to a simmer.
Mix the cornstarch with 1-2 tablespoons of chicken broth or water. Add to the pan. Simmer (while stirring) until the sauce thickens and reduces somewhat.
Add the gnocchi and chicken. Serve!
