The Crispy Air Fryer Potato Recipe That Makes Weeknight Dinners Better
Sometimes the best side dishes are the simplest ones. These Air Fryer Garlic Parmesan Potato Bites transform an ordinary potato into a crispy, flavorful side that pairs perfectly with everything from grilled chicken to burgers.
Thanks to the air fryer, you get that delicious roasted texture with only a small amount of oil.
One of my favorite things about this recipe is how easy it is to make. With just a handful of pantry staples and about 15 minutes of cooking time, you can have a satisfying side dish on the table without turning on the oven. Even better, these potato bites are Weight Watchers friendly.

The Ingredients
Potatoes: Potatoes often get a bad reputation, but they’re actually packed with nutrients. They’re a great source of potassium, which helps support healthy blood pressure, and they provide vitamin C, vitamin B6, and fiber.
Potatoes are naturally fat-free and can be very filling, helping you stay satisfied longer.
Olive Oil: A small amount of olive oil helps the seasonings stick to the potatoes while promoting crispiness in the air fryer.
Olive oil contains heart-healthy monounsaturated fats and antioxidants that support overall health. Since this recipe uses only one teaspoon, you get the benefits without adding excessive calories.
I like adding my olive oil to an Oil Sprayer. It helps to get the most out of a small amount of olive oil.

How to Make Garlic Parmesan Potato Bites
Place the diced potatoes in a large bowl. Add the olive oil, garlic powder, onion powder, paprika, salt, and pepper. Toss until evenly coated.
Arrange the potatoes in a single layer in the air fryer basket. Cook in batches if needed to avoid overcrowding.
Air fry for 15–18 minutes, shaking the basket halfway through cooking, until the potatoes are golden brown and crispy.
Transfer the potatoes to a serving bowl and immediately sprinkle with Parmesan cheese. Serve while warm.

Ingredients
- 2 medium russet potatoes, diced into half inch cubes

- 2 tablespoons grated Parmesan cheese
- Optional: garnish with parsley or chives
Instructions

- Air fry at 400 degrees F for 15–18 minutes, shaking the basket halfway through cooking, until the potatoes are golden brown and crispy.
- Transfer the potatoes to a serving bowl and immediately sprinkle with Parmesan cheese. Serve while warm.
