Cheesy Bean and Rice Burrito (Ten Dollar Meal)
This is another $10 meal! It can feed a family or be used for meal prep.
It’s similar to the Taco Bell cheesy bean and rice burrito but lower in points.
The Taco Bell version is 11 points for a burrito while mine is only 6 points.

The Ingredients
I did all of my shopping for this recipe at Kroger. I’ll list everything I bought and how much it cost.
Tortillas: I bought Kroger whole wheat soft taco tortillas. It was my first time buying them and I really liked them.
You get 10 tortillas for $2.29.
Refried beans: To keep it light I bought fat-free refried beans. They have a good amount of protein and fiber in them.
I bought a 16 ounce can for $1.19.
Spanish rice: This helps to add a lot of flavor for not a lot of money.
A bag of Knorr Spanish rice was $1.25.
Mexican cheese: I bought reduced-fat Mexican cheese (shredded) to help keep the points low.
The Kroger brand was $2.49.
Taco Bell mild sauce: This helped to really give it that Taco Bell taste.
A 7.5 ounce bottle was $2.50.
The total spent for this recipe was $9.72. It makes 8 burritos and you still have some of the ingredients left for other recipes.
The Taco Bell cheesy bean and rice burrito includes nacho cheese and creamy jalapeno sauce. To save points I used reduced-fat shredded cheese and Taco Bell mild sauce instead of the creamy jalapeno sauce.

How to Make Cheesy Bean and Rice Burritos
Cook the Spanish rice according to the directions on the package. I omitted the oil so it was lighter in fat and calories.
I added the fat-free refried beans to a microwave safe bowl and added a couple tablespoons of water. This makes the beans easier to stir and work with.
Microwave the refried beans for 1-2 minutes. If the beans are still thick you can add a little more water. Be careful, the bowl will be hot.
Before preparing the burritos, heat a nonstick skillet over medium heat.
Lay out a tortilla. Top it with refried beans, two tablespoons of rice, one tablespoon of cheese, and some of the Taco Bell mild sauce.
Fold in the sides of the burrito then roll up from the bottom.
Place the burrito in the pan seam side down. Cook for 1-2 minutes on each side or until it is golden.

Cheesy Bean and Rice Burritos

Ingredients
- 8 whole wheat soft taco tortillas
- 16 oz. fat-free refried beans
- 1 packet (5.6 oz) Knorr Spanish rice
- 1/2 cup reduced-fat Mexican cheese
- 8 tablespoons Taco Bell mild sauce
Instructions
- Cook the Spanish rice according to the directions on the bag.
- Put the fat-free refried beans in a microwave safe bowl. Add a couple tablespoons of water and mix together. Microwave on high 1-2 minutes.
- Heat a nonstick skillet over medium heat.
- Lay out a tortilla. Top it with refried beans, 2 tablespoons of rice, one tablespoon of cheese, and one tablespoon of Taco Bell mild sauce.
- Fold in the sides of the burrito then roll up from the bottom. Repeat with the other 7 burritos.
- Place the burrito in the pan seam side down. Cook for 1-2 minutes on each side or until it's golden.
