Cheesy Bean and Rice Burritos

Ingredients

  • 8 whole wheat soft taco tortillas
  • 16 oz. fat-free refried beans
  • 1 packet (5.6 oz) Knorr Spanish rice
  • 1/2 cup reduced-fat Mexican cheese
  • 8 tablespoons Taco Bell mild sauce

Instructions

  • Cook the Spanish rice according to the directions on the bag.
  • Put the fat-free refried beans in a microwave safe bowl. Add a couple tablespoons of water and mix together. Microwave on high 1-2 minutes.
  • Heat a nonstick skillet over medium heat.
  • Lay out a tortilla. Top it with refried beans, 2 tablespoons of rice, one tablespoon of cheese, and one tablespoon of Taco Bell mild sauce.
  • Fold in the sides of the burrito then roll up from the bottom. Repeat with the other 7 burritos.
  • Place the burrito in the pan seam side down. Cook for 1-2 minutes on each side or until it's golden.
