One Pot Mediterranean Pasta
One pot meals are perfect for busy weeknights. It’s ready in less than a half hour and there’s only one dish to clean.
This recipe also incorporates the health benefits of a Mediterranean diet.
Minimal cleanup and maximum flavor!

Even the pasta cooks in the same pan, so there’s no need to dirty a strainer. Most of the water gets absorbed by the noodles and you’re left with a delicious sauce flavored by all of the ingredients.
What you need to make One Pot Mediterranean Pasta:
- Spaghetti noodles
- Grape tomatoes or cherry tomatoes
- Red onion
- Garlic
- Artichokes
- Black olives
- Reduced fat feta cheese
- Lemon
- Water
- Salt and black pepper
Make sure to use a large straight-sided skillet, large enough for the spaghetti noodles to fit.

How to Make It:
Add all of the ingredients (except the lemon juice and feta cheese) to the pot. Pour the water over it and turn the heat to high.
Once the water comes to a boil, reduce the heat to medium-high and cook for 10 minutes.
It’s very important you stir the noodles while it’s cooking so they don’t stick together.
During the last few minutes of cooking time you will notice the water cooking away. At the end, you’ll be left with a delicious sauce since the starch from the noodles helps to naturally thicken it.
Once it’s done cooking, stir in the lemon juice and feta cheese.
This dish makes four servings that are about 1 1/2 cups each.

If you want to reduce the points you can change it to 6 (one cup) servings for only 6 points per serving.
One Pot Mediterranean Pasta

Ingredients
- 10 oz. spaghetti noodles
- 1 cup grape or cherry tomatoes, cut in half
- 1 small red onion, sliced or chopped
- 10 oz. artichoke
- 10 black olives, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 1/2 cups water
- Juice from 1/2 of a lemon
- 1/2 cup reduced-fat feta cheese
Instructions
- Add the spaghetti noodles, tomatoes, red onion, artichoke, olives, garlic, salt, pepper, and water to a large straight-sided pot.
- Turn the heat to high and let the water come to a boil. Reduce the heat to medium-high and cook for 10 minutes. Make sure to stir the noodles throughout the cooking process so they don't stick together.
- Turn the heat off and stir in the lemon juice and feta cheese.
