Ingredients
10 oz.spaghetti noodles
1cupgrape or cherry tomatoes, cut in half
1smallred onion, sliced or chopped
10oz.artichoke
10black olives, chopped
3clovesgarlic, minced
1/2teaspoonsalt
1/4teaspoonblack pepper
3 1/2cupswater
Juice from 1/2 of a lemon
1/2cupreduced-fat feta cheese
Instructions
Add the spaghetti noodles, tomatoes, red onion, artichoke, olives, garlic, salt, pepper, and water to a large straight-sided pot.
Turn the heat to high and let the water come to a boil. Reduce the heat to medium-high and cook for 10 minutes. Make sure to stir the noodles throughout the cooking process so they don't stick together.
Turn the heat off and stir in the lemon juice and feta cheese.
