One Pot Mediterranean Pasta

Ingredients

  • 10 oz. spaghetti noodles
  • 1 cup grape or cherry tomatoes, cut in half
  • 1 small red onion, sliced or chopped
  • 10 oz. artichoke
  • 10 black olives, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 1/2 cups water
  • Juice from 1/2 of a lemon
  • 1/2 cup reduced-fat feta cheese

Instructions

  • Add the spaghetti noodles, tomatoes, red onion, artichoke, olives, garlic, salt, pepper, and water to a large straight-sided pot.
  • Turn the heat to high and let the water come to a boil. Reduce the heat to medium-high and cook for 10 minutes. Make sure to stir the noodles throughout the cooking process so they don't stick together.
  • Turn the heat off and stir in the lemon juice and feta cheese.
