While it comes in an array of flavors, the variety infused with garlic and herbs is what I used for this recipe. It’s packed full of flavor!

The Benefits of Adding Spinach to Your Pasta:
While pasta on its own is indeed mouth-watering, integrating a powerful green like spinach can take your dish from good to super nutritious.
Spinach is not just a vibrant addition to your pasta; it’s a superfood with its myriad health benefits.
Iron, fiber, calcium, and vitamins A, C, and K1 are all part of the package with this leafy green.
Its iron content supports red blood cell function while its fiber aids in digestion. Calcium, along with vitamin K1, contributes to bone health, and the vitamins A and C are vital for skin health and immunity.
So, you’re not just adding a pretty green hue to your pasta dish; you’re also investing in your overall wellness.
How to Make Creamy Boursin Pasta with Spinach:
I love that this recipe only takes about 20 minutes to make.
Start by bringing a pot of water to a boil. Add salt to the pot and pour in 8 ounces of rigatoni noodles. I used my food scale to make sure I had exactly 8 ounces.
Cook the pasta according to the directions on the box. Before draining the water, reserve 1 cup of the pasta water.
While the noodles are in the strainer, add 3 ounces of garlic and herb Boursin cheese to the pot.
Stir in 1/2 cup of the pasta water. Stir together the Boursin cheese and pasta water over medium-low heat until it’s melted and combined.
Next, you want to add the pasta and spinach to the Boursin cheese mixture. Put a lid on it and let it cook for 2 minutes.
Remove the lid and give it a good stir. Once the spinach has wilted you can turn the heat off. At this time I added the salt and another 1/4 cup of pasta water.
Stir everything together, the sauce should be creamy. If necessary, add the remaining 1/4 cup of pasta water.
I topped my pasta with crushed red pepper and fresh cracked black pepper.
Serving Suggestions:
While this pasta dish is great on its own, you could also add protein to it to make it a complete meal.
Boneless, skinless chicken breast and shrimp are great 0 point options.
You can also serve this pasta dish with a mixed greens salad tossed with a lemon vinaigrette dressing.

- 8 oz. rigatoni pasta
- 3 oz. Boursin garlic and herb cheese
- 2 cups baby spinach
- 1 cup reserved pasta water
- 1/4 teaspoon salt

Boil a large pot of water. Add salt, then add the rigatoni. Cook according to the directions on the box.

Before draining the pasta, reserve 1 cup of the pasta water.

While the pasta is in the strainer, add 1/2 cup of pasta water and the Boursin cheese to the pot. Cook over medium-low heat and stir until the cheese is melted and mixed with the pasta water.

Stir in the rigatoni and spinach. Cover with a lid and let cook for 2 minutes.

Remove the lid and add the salt. If the sauce is no longer creamy add more of the pasta water, 1/4 cup at a time.

Optional: Top with crushed red pepper flakes and fresh cracked black pepper.
