One of the key ingredients in these delicious broccoli tots is, of course, broccoli.

How to Make Cheesy Broccoli Tots:
I used frozen chopped broccoli for this recipe and cooked it according to the directions on the bag.
Even though the broccoli was chopped I wanted it to be more like riced broccoli. You can either cut it with a knife or put it in a food processor.
Add the broccoli to a medium bowl with the cheddar cheese, Italian breadcrumbs, egg, garlic powder, salt, and pepper, then stir everything together.
Spray a mini muffin pan with nonstick cooking spray, then fill with the broccoli mixture.
Bake at 400 degrees F. for 15 minutes.
You can eat the tots as-is or serve them with ketchup or a low point ranch.

- 10 oz. frozen chopped broccoli
- 1/2 cup reduced-fat cheddar cheese, shredded
- 2 tablespoons Italian breadcrumbs
- 1 egg
- 1/8 teaspoon garlic powder
- Salt and pepper, to taste

Preheat oven to 400 degrees F. Spray a mini muffin pan with nonstick cooking spray.

Cook the broccoli according to the directions on the bag. Chop the broccoli in a food processor. If you don't have a food processor you can use a knife.

Add the broccoli, cheddar cheese, breadcrumbs, egg, garlic powder, salt, and pepper to a mixing bowl and stir together.

Add the broccoli mixture to the mini muffin pan. Pat down the broccoli in each muffin so that it stays together.

Bake for 15 minutes. Let it cool for a few minutes before removing the cheesy broccoli tots from the pan.
