A frittata is basically a crustless quiche. Eliminating the crust helps to lower the calories, but it’s still delicious and filling.
This Bacon and Broccoli Frittata is perfect for breakfast or brunch.
I love that it’s so low in points! I can have two pieces for only 4 points.

I filled my frittata with bacon, broccoli, and cheese but you can use any of your favorite vegetables.
How I kept this frittata light:
Making this a crustless quiche/frittata was the main way I kept this light. Skipping the crust helped to save a lot of points.
Using skim milk instead of whole milk or cream also helped to save points.
I also used reduced-fat cheddar cheese. You can use any reduced-fat cheese you have on hand.
How to make this Bacon and Broccoli Frittata:
I used fresh broccoli that I chopped into bite-size pieces. You could also use frozen broccoli just make sure to thaw it first.
Add the broccoli and red onion to a nonstick skillet sprayed with olive oil. Let it sauté 7-10 minutes.
In a medium bowl add the eggs and skim milk, then whisk together.
Spray a 9″ pie dish with nonstick cooking spray. Add the broccoli and onion to the pie dish.

Chop three pieces of bacon and top the broccoli with it.

Next, add the reduced-fat cheese.

Pour the egg mixture evenly over the broccoli, bacon, and cheese.

Bake the frittata for 40-45 minutes, or until the center is set.
Let the frittata sit for 5 minutes before cutting.

Yield: 6 servings

- 1/4 cup sliced red onion
- 1/2 cup reduced-fat mild cheddar cheese, shredded
- 3 slices center cut bacon, cooked and chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder

Add the broccoli and onions to the pie dish. Next, add the chopped bacon and cheddar cheese.

Pour the egg mixture evenly over the ingredients.

Bake 40-45 minutes or until the center is set. Let sit 5 minutes before serving.
