This dessert is not only delicious and colorful, it’s also low in points!
If you’re looking for a tasty dessert recipe that is WW friendly, you need to try this.

Recently, I made Crunchy French Toast. It’s basically French Toast with a crunchy outer part thanks to Cinnamon Toast Crunch.
My daughter and I love going to the dollar store. We can easily walk around for a half hour just checking things out.
I actually bought the Cinnamon Toast Crunch from the dollar store for the Crunchy French Toast recipe. I knew I wouldn’t need a whole box for it so it was the perfect size and only $1.25.
For this recipe I bought a bag of Fruity Pebbles from the dollar store. It was one of my favorite cereals growing up so it was for the best that I didn’t have to buy a big box of it.
How I Kept it Light
By no means am I trying to say this dessert is healthy. It’s not something I would eat every day, but it’s fun to have occasionally.
For the cake, I used Pillsbury sugar free yellow cake. That helped to save a lot of points since there’s no sugar in it.
Instead of using oil and eggs to mix with the cake I used diet strawberry pop. We have Faygo diet red pop here in Michigan. It’s so good!
You could also use diet orange pop, that would taste good with the Fruity Pebbles.
For the frosting I used fat free Cool Whip. It’s much lower in points than regular frosting.
As far as the Fruity Pebbles I made sure to measure them out so the points were accurate. One cup is 6 points.

Making the Cake
Start by preheating the oven to 350 degrees F.
Add the cake mix to a large mixing bowl. Pour in 12 ounces of the diet strawberry pop.
Use a hand mixer on medium speed for 2 minutes.
Spray a 9×13 cake pan with nonstick cooking spray. Pour in the batter and bake 34-38 minutes, or until a toothpick inserted into the center comes out clean.
While the cake is baking add the Fruity Pebbles to a zip up bag and use a rolling pin or meat mallet to break the cereal into small pieces.
Let the cake cool completely before adding the Cool Whip. Spread it evenly over the cake, then top with the Fruity Pebbles.

- 8 oz. fat-free Cool Whip
- 1 cup Fruity Pebbles

Combine by using a handheld mixer at medium speed for two minutes.

Pour the batter into the 9×13 pan. Bake 34-38 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely before adding the Cool Whip.

Add the cereal to a zip up bag and use a meat mallet or rolling pin to break down the cereal pieces.

Spread the Cool Whip evenly over the cake. Sprinkle the Fruity Pebbles over the Cool Whip.

If you're not eating the cake right away, wait to add the Fruity Pebbles so they don't become soggy.
