This Creamy Lemon Pie is the perfect summer dessert!
I live in Michigan, and we’ve had some really nice weather this week. 80 degrees in April is always a treat.
It has me excited for summer recipes!

I’m not a huge fan of lemon, but I loved this dessert.
Plus, it’s easy to make. I used a store bought pie crust which saved time and having to clean dishes.
How I lightened it up:
There are two layers of lemon in this pie.
The bottom layer is lemon pudding. I used sugar-free, fat-free lemon pudding/pie mix.
I used skim milk to mix with the pudding. Two cups of skim milk is 5 points.
The second lemon layer is pudding mixed with Cool Whip. I used fat-free Cool Whip to help save points.

How to make Creamy Lemon Pie:
In a medium mixing bowl whisk together the lemon pudding mix and skim milk.
You need to whisk it for two minutes.
Add 1 1/2 cups of the pudding to the bottom of the pie crust.
Use an offset spatula to spread the pudding into an even layer.
Next, add 4 ounces of the fat-free Cool Whip to the mixing bowl with the remaining pudding. Gently fold the Cool Whip and pudding together.
Pour it into the pie crust and use the offset spatula to smooth it out into an even layer.
Let the pie refrigerate for at least an hour.
Everything about this pie makes it perfect for warm weather. There’s the delicious lemon flavor plus it will help keep you cool

Yield: 8 servings

- 1 (1 ounce) box Lemon Jell-O sugar-free, fat-free pudding pie mix
- 2 cups skim milk
- 4 ounces fat-free Cool Whip
- 1 store bought graham cracker pie crust

Nice to see a dessert that doesn’t have a ton of sugar! This sounds really good and I can’t wait to make it.
Love the sugar free ingredients because that’s what I use when I can.
Would it taste the same with full fat ingredients?
I haven’t used full fat ingredients, but I don’t see why not! 🙂
