This is the perfect recipe for leftover turkey!
Sometimes white meat from the turkey can be a little dry the next day. Putting it in soup is the perfect way to fix that!

Plus this is an easy meal that’s ready in about 30 minutes.
If you have a busy day of shopping planned Friday this soup is perfect to come home to. This healthy soup is comforting and filling.
How I kept this soup light:
I used a nonstick stockpot to make the soup that way I could cut back on the butter. I used 1 teaspoon of light butter to cook the celery, carrots, and onion.
Using only white meat from the turkey also helps keep it low in points. I cut the turkey into small pieces but you could also shred it if you like larger pieces of meat.
How to make Turkey Rice Soup:
First I cut up the vegetables. Melt the butter in a nonstick stockpot and add the carrots, celery, and onion.
Let that cook for 5 minutes. Add the minced garlic during the last minute.
While the veggies are cooking I cut/shredded the turkey.
Add the chicken broth to the pot followed by the turkey.
I added the thyme, parsley, salt and pepper, then stirred in the rice.
Pour in the rice and let the soup simmer for 20 minutes, or until the rice is cooked through.

- 1 teaspoon light butter
- 2 medium carrots, sliced
- 2 ribs celery, sliced
- 1 small yellow onion, chopped
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1/2 teaspoon dry thyme
- 1 tablespoon fresh parsley, chopped
- 2 cups skinless turkey breast, cooked
- 1/2 cup uncooked white rice
- Salt and pepper, to taste

Melt the butter in a nonstick stockpot. Add the carrots, celery and onion. Cook for 5 minutes adding the garlic during the last minute.

While the vegetables are cooking shred/cut up the turkey.

Add the chicken broth to the pot. Stir in the thyme and parsley, then add the turkey.

Bring the soup to a simmer and add the rice. Cook for 20 minutes or until the rice is cooked through. Taste the soup then add the salt and pepper.
