Turkey Rice Soup

Ingredients

  • 1 teaspoon light butter
  • 2 medium carrots, sliced
  • 2 ribs celery, sliced
  • 1 small yellow onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1/2 teaspoon dry thyme
  • 1 tablespoon fresh parsley, chopped
  • 2 cups skinless turkey breast, cooked
  • 1/2 cup uncooked white rice
  • Salt and pepper, to taste

Instructions

  • Melt the butter in a nonstick stockpot. Add the carrots, celery and onion. Cook for 5 minutes adding the garlic during the last minute.
  • While the vegetables are cooking shred/cut up the turkey.
  • Add the chicken broth to the pot. Stir in the thyme and parsley, then add the turkey.
  • Bring the soup to a simmer and add the rice. Cook for 20 minutes or until the rice is cooked through. Taste the soup then add the salt and pepper.
