Turkey Rice Soup

Ingredients

light butter

carrots, sliced
2
ribs
celery, sliced

small
yellow onion, chopped
2
cloves
garlic, minced

cups
chicken broth
1/2
teaspoon
dry thyme
1
tablespoon
fresh parsley, chopped

cups
skinless turkey breast, cooked
1/2
cup
uncooked white rice
Salt and pepper, to taste
Instructions
Melt the butter in a nonstick stockpot. Add the carrots, celery and onion. Cook for 5 minutes adding the garlic during the last minute.
While the vegetables are cooking shred/cut up the turkey.
Add the chicken broth to the pot. Stir in the thyme and parsley, then add the turkey.
Bring the soup to a simmer and add the rice. Cook for 20 minutes or until the rice is cooked through. Taste the soup then add the salt and pepper.
