One of the many things I love about fall is busting out my slow cooker.
This easy pot roast is one of the many reasons why. The meat is so tender it melts in your mouth!

Even if you’re new to cooking, this recipe is so easy. Simply add all of the ingredients to the slow cooker and it does all of the work.
How I lowered the points:
I bought a 2 lb. beef roast and I trimmed away any visible fat. The beef will shrink while cooking so it’ll go from 32 ounces to about 24 ounces.
The recipe makes 6 servings so that’s 4 ounces of cooked beef per serving.
My original recipe calls for regular cream of mushroom soup. To lighten it up I used 98% fat free cream of mushroom soup.
You can add as many carrots as you want since they’re zero points. I added 2 cups of baby carrots.
Potatoes are 0 points for my Personal Points plan, but I know that’s not the case for everyone. I used 1 lb. of baby red potatoes.
How to make this Easy Slow Cooker Pot Roast:
In a medium bowl I mixed together the cream of mushroom soup, Lipton French onion soup seasoning, garlic powder and 1/4 cup of water.
Once the roast was trimmed of fat I added it to my slow cooker, then poured the soup mixture over it.
Next, I added the baby carrots, baby red potatoes and onion.
Put the lid on and let it cook on low for 8 hours.
The beef will be so tender when it’s done that you can shred it with a fork!

- 2 lb. beef roast, trimmed of fat
- 2 cans 98% fat free cream of mushroom soup (21 oz.)
- 1 packet Lipton French onion soup mix (1 ounce)
- 1/4 cup water
- 1/4 teaspoon garlic powder
- 2 cups baby carrots
- 1 lb. baby red potatoes
- 1 onion cut into small chunks

In a medium bowl mix together the cream of mushroom soup, French onion soup mix, water and garlic powder.

Add the beef roast to a slow cooker and pour the soup mixture over it. Add in the carrots, potatoes and onion.

Put the lid on the slow cooker and cook on low for 8 hours.
