This Dorito Chicken Casserole is filled with chicken, cheese, Doritos and vegetables!
And it’s easy to make, perfect for leftover chicken or a rotisserie chicken from the store.
The prep time for this casserole is about 10 minutes, that’s it!

The most time consuming part is cutting up the chicken. I used skinless chicken breasts to keep it low in points, you need 2 cups.
There are a few things I did to help keep this low in Weight Watchers points. Instead of regular cream of chicken soup I used 98% fat free cream of chicken soup.
A lot of Dorito Chicken Casseroles put crushed Doritos on the bottom and top. I reduced the amount of nacho cheese Doritos I used and only put them on top.
Instead of regular sour cream I used fat free sour cream. Since it’s mixed with the cream of chicken soup you can’t even tell a difference.
I used one cup of cheese for the topping. I went with reduced fat Mexican cheese blend.
Adding a cup of vegetables gives it a bit of a healthy kick, I just used frozen mixed vegetables.
To make this casserole I started by shredding the cooked chicken. I put it in a large mixing bowl then added the vegetables, cream of chicken, sour cream and seasonings. I mixed it together then added it to a 2-quart casserole dish.
Since I only used 3 ounces of the Dorito chips I used a food scale to weigh them. Then I put them in a baggie and used a meat mallet to break them into pieces.
Top the casserole with the Doritos then the shredded cheese.
Since we’re using cooked chicken you just need to bake it until it’s heated through and the cheese is melted, about 35 minutes.
Per serving the Weight Watchers points are 6 for blue and purple, 7 for green. There are six servings in this recipe.

- 2 cups boneless, skinless chicken breast, cooked and shredded
- 1 cup frozen mixed vegetables
- 1 (10.5 oz.) can 98% fat free cream of chicken soup (condensed)
- 1 cup fat free sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 oz. nacho cheese Doritos
- 1 cup reduced fat Mexican cheese, shredded

Preheat oven to 350 degrees F.

Add the chicken, vegetables, cream of chicken soup, sour cream, garlic powder, onion powder, salt and pepper to a large mixing bowl. Stir together.

Spray a 2-quart casserole dish with nonstick cooking spray. Add the chicken mixture to the casserole dish.

Place Doritos in a zip up bag. Seal it and use a meat mallet to break the Doritos into small pieces. Top the chicken mixture with the Doritos.

Add the cheese to the top of the Doritos. Bake for 35 minutes, or until it is heated through and the cheese is melted.
