This Cajun Cicken & Rice is a perfect weeknight meal!
It’s easy to make and full of flavor. Only 6 points for blue and purple, 8 points for green. Each serving is approximately 1 1/4 cups.
I used red pepper for this but you could also use orange or yellow. It also tastes great with cilantro!

I’ll be honest, this picture doesn’t do this dish justice. It tastes great and it’s a filling meal!
The rice takes about 20 minutes to cook so I got that started first. Once that was going I started getting the chicken ready.
I cut the chicken into bite size pieces and seasoned it with the cajun seasoning. I put that in a heated pan that I sprayed with olive oil spray.
While the chicken was cooking I chopped up the red pepper and onion.
Once the chicken was cooked I set it aside on a plate. I sprayed the pan again and added the red pepper and onion. I let those cook for about 5 minutes and added minced garlic for the last minute.
Next I added the diced tomatoes. Once that was heated up I added the chicken and rice to the pan.
After it was all heated through I added the Mexican cheese.
That’s it! This recipe takes about 30 minutes to make. It’s perfect for those busy weeknights.

Yield: 4 servings (approximately 1 1/4 cups per serving – 6 points per serving for blue and purple, 8 points for green)
- 2 cups cooked rice (approximately 1 cup uncooked)
- 1 lb. boneless, skinless chicken breast
- 2 teaspoons cajun seasoning
- 1 red pepper, chopped
- 1/2 onion, chopped
- 1 clove of garlic, minced
- 14 1/2 oz. diced tomatoes
- 1 cup reduced-fat Mexican cheese, shredded
- Salt, to taste

Cook the rice according to the directions on the bag.

Cut the chicken into bite size pieces and season with 1 teaspoon of cajun seasoning. Spray a heated pan with olive oil spray and add the chicken. Cook 3-4 minutes per side.

While the chicken is cooking chop the red pepper and onion.

Put the cooked chicken on a plate. Spray the pan with olive oil spray and add the red pepper and onions and cook for 5 minutes. Add the minced garlic during the last minute.

Add the diced tomato to the pan. Once it's heated through add the chicken, rice and Mexican cheese. Stir until the cheese is melted.
