This Chilled Cucumber Soup is the perfect soup for summer!
Another good thing about this soup is that it is 0 points for blue and purple! For green it is 3 points.
I’m weird and still eat hot soup in the summer, but I know not everyone does. It’s not exactly refreshing to have a bowl of hot soup on a 90 degree day. 🙂

This soup is really easy to make, but you want to let it chill in the fridge for at least 1 hour or even overnight.
Here are the ingredients you need for Chilled Cucumber Soup:
- Fat-free Greek yogurt
- 2 English cucumbers
- Garlic
- Yellow onion
- Lemon
- Dill
- Salt
Since the soup is 0 points (I follow blue) I like to serve it with pita bread. It’s a low point, filling lunch!
All you have to do is add all of your ingredients to a blender and let it run until it’s smooth.
As thick as the fat-free Greek yogurt is the soup will end up being liquidy. There’s no need to add any additional liquid when you’re putting the ingredients in the blender.
Cucumbers are really good for you. They’re packed with vitamin K! You’ll also get vitamins B and C plus potassium and magnesium.
This is a healthy soup!

Yield: 2 servings (0 points per serving for blue and purple, 3 points per serving for green)
- 1 1/2 cups fat-free Greek yogurt
- 2 English cucumbers, peeled and cut into slices
- Juice of 1 lemon
- 2 tablespoons chopped yellow onions
- 1 clove garlic, minced
- 2 teaspoons dried dill
- Salt, to taste

Add all of the ingredients to the blender and puree until smooth.

Add salt if necessary.

Chill for 1 hour or overnight.
