This Sausage and Cheese Tortellini is easy, filling and delicious!
It’s more like a stew than a soup, big bites of sausage and cheese tortellini in a sauce.
Another option is to add spinach. I think spinach is a great way to trick kids into eating vegetables.

Another option is to add fresh basil to the sausage and cheese tortellini. You can also add Parmesan cheese, just make sure to add the extra points.
You only need a few ingredients to make this recipe:
- Chicken sausage
- Cheese tortellini
- Tomato sauce
- Chicken broth
- Fat-free half and half
- Salt, pepper and seasonings
I used Al Fresco All Natural Italian style chicken sausage which was 2 points for each link. You can use whatever kind of chicken sausage you would like, just make sure to double check the points.
Same with the cheese tortellini, I used 1 1/2 cups Buitoni cheese tortellini. If you use a different type of tortellini make sure you double check the points.
Tortellini is something I almost always have on hand, mostly for my kids. It’s perfect for an easy lunch or dinner.
I love tortellini, but it’s not very point friendly to sit down to a whole bowl of it. That’s why I try to add it to recipes, but in small amounts.

Yield: 4 servings – 6 points per serving for blue, green and purple
- 12 oz. chicken sausage
- 2 cloves garlic, minced
- 14 1/2 oz. tomato sauce
- 1/2 cup chicken broth
- 1/2 teaspoon onion powder
- 1/2 teaspoon basil
- 1 1/2 cups cheese tortellini
- 3 tablespoons half and half
- Salt and pepper, to taste

Slice the sausage and add it to a pan. Cook on medium/low heat until the sausage is heated through. Add the garlic, then stir for one minute.

Add the tomato sauce, chicken broth, onion powder, basil and cheese tortellini. Bring the sauce to a simmer and cook for 10 minutes, stirring occasionally.

Stir in the half and half and salt and pepper, if desired.
