Recently I was craving pizza, but I wanted something a little different. This four cheese spinach flatbread pizza hit the spot!!
How could something with four cheeses not be good!? We’re talking cream cheese, Parmesan cheese, mozzarella cheese and feta!
It’s also packed full of spinach! I bought a 5 ounce tub of fresh baby spinach.
I can remember the first time I cooked something with fresh spinach. It was a long time ago, but I couldn’t believe what happened to it once it was cooked!
I still love watching spinach cook. That probably sounds weird, but it’s fun to me! It starts so big and gets so small in such a short amount of time.

Flatout flatbread is what I used to make the pizza. It’s great because it’s only 2 points per flatbread, which is quite large.
I tracked this recipe as two servings. I cut the flatbread into four pieces, so two pieces was 4 points. That’s for blue, green and purple.
This flatbread pizza is also super easy to make, and only takes 10 minutes to bake.
To start you’ll want to chop up the spinach and add it to a pan sprayed with 0 point olive oil spray. Also add 1 clove of minced garlic and stir until spinach is cooked. It only takes a couple of minutes.
Next I added the cream cheese and let that melt into the spinach. Once that was melted I added the grated Parmesan cheese.
I spread the spinach mixture over the Flatout flatbread, then topped it with the mozzarella and feta cheese.
All that was left to do was popping it in the oven for 10 minutes. That’s it! Super easy and super delicious!

Yield: 2 servings (4 points per serving for blue, green and purple)
- 1 Flatout Flatbread
- 5 oz. fresh baby spinach
- 1 clove garlic, minced
- 2 tablespoons light cream cheese
- salt, to taste
- 1 tablespoon grated Parmesan cheese
- 2 tablespoons part-skim mozzarella cheese, shredded
- 2 tablespoons reduced-fat feta cheese

Preheat oven to 350 degrees F.

Spray a large frying pan with 0 point olive oil spray. Add the spinach and let cook for 1 minute, then add the garlic and cook 1-2 more minutes.

Add the light cream cheese. Stir and cook until it is melted and blended with the spinach. Add the Parmesan cheese and stir.

Place the Flatout Flatbread on a baking sheet. Spread the spinach mixture over it, then add the mozzarella and feta cheese.

Bake for 10 minutes. Remove from oven and let cool a minute before slicing. Enjoy!
