Lightened Up Vodka Sauce

This lightened up vodka sauce is the perfect addition to your pasta!

You can even put it over zucchini noodles. Any way you want to eat it, it’s delicious!

I decided to only calculate the points for the vodka sauce. With all of the different plans, there are so many combinations you can do.

For example, whole wheat pasta is zero points with purple. If you are on purple your meal would only be 2 points!

There are 8 servings of this vodka sauce, each serving is about 1/2 cup. The vodka sauce is only 2 points per serving for blue, green and purple.

I used gnocchi that is only 5 points per serving, my meal was 7 points.

Vodka is high in points. The good stuff always is! So I only used 1/2 cup.

I used tomato sauce in the recipe, since it is 0 points. If you like a chunkier sauce you can use crushed tomatoes. Those are also 0 points.

To make the vodka sauce creamy I used fat free half and half.

All in all this sauce is very easy to make. It only takes about 15 minutes. It’s great for a weeknight meal!

I also like to add fresh basil and shredded Parmesan cheese to the finished dish. If you choose to add Parmesan cheese make sure you add any extra points.

Yield: 8 servings (2 points per serving for blue, green and purple)

  • 1 teaspoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 cup vodka
  • 30 oz. tomato sauce (or crushed tomatoes)
  • 1 cup fat free half and half
  1. Heat olive oil in a saucepan, then add the garlic. Cook for 1 minute, then add the vodka.

  2. Cook the vodka for a minute, then add the tomato sauce. Bring to a simmer and let cook for 5 minutes.

  3. Add the half and half and stir. Cook for 5 more minutes, then serve with pasta or zucchini noodles.
