Lightened Up Vodka Sauce

- 1 teaspoon extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 cup vodka
- 30 oz. tomato sauce (or crushed tomatoes)
- 1 cup fat free half and half
Heat olive oil in a saucepan, then add the garlic. Cook for 1 minute, then add the vodka.
Cook the vodka for a minute, then add the tomato sauce. Bring to a simmer and let cook for 5 minutes.
Add the half and half and stir. Cook for 5 more minutes, then serve with pasta or zucchini noodles.
