Grilled Chicken with Chimichurri Sauce – WW (Weight Watchers) Freestyle

I just tried chimichurri sauce a couple of weeks ago and it was life changing!

My friends husband went to culinary school. Everything he makes is delicious! He also makes things I would never think to try, and I always love it.

One time he made this cold squash soup. I thought there was no way I would like it, but it was delicious!

A couple of weeks ago we were at their house and he was cooking. He made chimichurri Sauce and I couldn’t believe how good it was.

He also made chicken, rice and bread. We ate the chimichurri on all of it! It was addicting….we just couldn’t stop.

There are many different ways you can make chimichurri sauce. One common ingredient is the oil. I lightened up my chimichurri sauce by replacing a small amount of oil with water.

It was still delicious! There are so many fresh flavors in this that it didn’t even matter.

I used fresh parsley and cilantro, dried oregano, extra virgin olive oil, garlic, white wine vinegar and salt. I added it all to my mini food processor and pressed the chop button about 5 times. I didn’t want it to turn into a liquid.

You can eat it right away or you can let it sit for 1 hour. Letting it sit for a little while makes it even more flavorful.

If you have any leftover you can keep it in the fridge in an airtight container for a couple of days. The herbs might loose some of the bright green color, but it still tastes great.

I had my chimichurri sauce with grilled chicken. I kept the chicken pretty basic and just seasoned it with salt and pepper.

This sauce tastes great on everything! You can have it with shrimp or steak…anything you want.

I have made this chimichurri sauce the last 3 days. Two times I had it with chicken, one time I had it with some pasta. I’m obsessed!

Ingredients
For the chicken:
  • 1 lb. boneless, skinless chicken breast
  • Salt and pepper, to taste
For the chimichurri sauce:
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon white wine vinegar
  • 3/4 cup fresh parsley
  • 3/4 cup fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
Instructions
  1. Season the chicken with salt and pepper. Grill the chicken until it is cooked all the way through.

  2. Add all of the ingredients for the chimichurri sauce into the food processor. Use chop/pulse the food processor 5 times to chop all of the ingredients. Do not go too long or the sauce will become liquid.
