Grilled Chicken with Chimichurri Sauce - WW (Weight Watchers) Freestyle

Ingredients

For the chicken:

  • 1 lb. boneless, skinless chicken breast
  • Salt and pepper, to taste

For the chimichurri sauce:

  • 1/4 cup extra virgin olive oil
  • 1 tablespoon water
  • 1 tablespoon white wine vinegar
  • 3/4 cup fresh parsley
  • 3/4 cup fresh cilantro
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Instructions

  • Season the chicken with salt and pepper. Grill the chicken until it is cooked all the way through.
  • Add all of the ingredients for the chimichurri sauce into the food processor. Use chop/pulse the food processor 5 times to chop all of the ingredients. Do not go too long or the sauce will become liquid.
