These ranch roasted chickpeas are so crunchy and tasty….you will think they were fried!
My younger daughter loves chickpeas. She will even eat them out of the can. Well, they’re washed first, but she eats them after they’re washed as a snack.
I don’t like chickpeas that much. I need to jazz them up a little if I’m going to snack on them.
I love that chickpeas are zero points. That makes for a low point snack! Roasting the chickpeas in the oven is very easy and there are endless possibilities as far as seasoning them.
One of my favorite ways to season them is with ranch mix. I buy the 1 oz. ranch dressing packet, but I only use half of it. Half of the pack is perfect for seasoning two cans of chickpeas.
The most important thing you need to do for these roasted chickpeas is to rinse them, then let them dry on a dishtowel. That step is very important to make sure that they get crunchy. I usually leave them on the dishtowel for a half hour.
When the chickpeas are drying out I usually peal the skin off if I see any that’s loose. I don’t do it to all of them, only if I see it coming off.
Once the chickpeas are dry I add them to a baking sheet lined with parchment paper.

You want to make sure they are all laying flat so they roast evenly.
At this point I spray the chickpeas with no-stick cooking spray and sprinkle half of the ranch seasoning on them.
The total cooking time for the ranch roasted chickpeas is 45 minutes. Half way through I take them out of the oven, mix them up, spray with more no-stick cooking spray and add the rest of the ranch seasoning.
That’s all there is to this recipe!

1/2 oz. of the ranch seasoning is one point. You could have all of the chickpeas for only 1 point!! If not, you can store them in an airtight container for 3-4 days.
When I picked my daughter up from school today I handed her a bag of the ranch roasted chickpeas. She was super excited and gobbled them right up.

Yield: 3 1/2 cups (1 point for blue and purple)
- 2 15.5 oz. cans of chickpeas
- .5 oz. Hidden Valley Ranch salad dressing and seasoning mix
- No-stick cooking spray

Preheat oven to 400 degrees F.

Drain and rinse the chickpeas. Lay them flat on a dishtowel (or paper towel) for 30 minutes to dry.

Line a baking sheet with parchment paper and add the chickpeas.

Spray the chickpeas with no-stick cooking spray and half of the ranch seasoning. Place in the oven for 20 minutes.

Take chickpeas out of the oven, stir them up, spray with no-stick spray and add the rest of the ranch seasoning. Place back in the oven for 25 minutes.
