Strawberry jam is my jam!! There is so much you can do with it!
This strawberry jam I made is one point for the entire thing. The recipe makes about 1 cup of jam. It’s the perfect addition to so many things!
One thing I like to do is add a tablespoon to some plain yogurt. Yum!
Another snack I love is putting reduced-fat cream cheese and strawberry jam on some reduced-fat Ritz crackers. It’s salty, creamy and sweet. So good!

You could also add the jam to plain oatmeal or pancakes. There are endless ways to use jam!
You could stick to the basics and just add it to a piece of toast. If you buy bread that is only one point per slice and only add 1-2 tablespoons of jam it would only cost you that one point for the bread. Add a couple of scrambled eggs and you have a one point breakfast.
You could also change out the strawberries for raspberries, blueberries, or blackberries.
The best part is, it’s super easy to make! I used one pound of strawberries, cut off the top and cut each one in half.
I added the strawberries to the Instant Pot with artificial granulated sugar (I used Splenda), lemon juice and water.I cooked it on high pressure for one minute, then let it naturally release.
I stirred in a cornstarch mixture and put the Instant Pot on saute. I let it cook for about 2 minutes while I stirred it. Once it thickened up my jam was ready! Check out the recipe below.

Yield: Approximately 1 cup (1 Freestyle point)
- 1 lb. strawberries
- 1 tablespoon lemon juice
- 2 tablespoons water, divided
- 1/2 cup granulated artificial sweetener
- 1 teaspoon cornstarch

Cut the top off of the strawberries, then cut in half.

Add the strawberries, lemon juice, 1 tablespoon water, and granulated artificial sweetener to the Instant Pot. Lock the lid in place, make sure the valve is set to seal and cook on high pressure for 1 minute.

Let the pressure release naturally.

Mix together the cornstarch and 1 tablespoon water.

Remove the lid and add the cornstarch mixture. Set the Instant Pot to saute and stir for 2 minutes, or until the mixture has thickened.
