These cucumber boats are one of my favorite go-to snacks. They are easy to make and they’re filling.
I love cucumbers. I eat them with dip, or on sandwiches….there’s just so much you can do with them!
I use one whole cucumber that is cut into four pieces with the seeds scraped out.
That’s the most labor intensive part of this recipe….and it takes about 3 minutes.
Plus cucumber, cottage cheese and dried dill are things I usually always have on hand. That’s the reason I started making this snack.
Sometimes the most basic recipe can be the most satisfying.
These cucumber boats hit the spot!
Yield: 4 cucumber boats (2 boats is 2 points for blue, green and purple. 4 boats is 3 points for blue, green and purple.)
- 1 cucumber
- 1 cup low-fat cottage cheese
- 1/2 teaspoon dill
- salt and pepper, to taste

Peel the cucumber. Cut cucumber in half, then cut the halves lengthwise.

In a small bowl mix the cottage cheese, dill, salt and pepper.

Scoop the cottage cheese mixture into the cucumbers.
