I’m not going to lie to you and tell you that these taste just like potatoes. They don’t. BUT if you like cauliflower I think you will really like these! Plus you get 8 of them for only 1 Freestyle SmartPoint.
Last night we had steak for dinner. I had plenty of points left for it, but I wanted a side that was very low in points.
This is where the cauliflower tots came in. They went great with the steak and only cost me one point.
It’s not a difficult recipe either. Simply add all of the ingredients together in a mixing bowl, stir together, then add to a mini muffin pan.
Then bake, flip, and bake some more.
I never used to like cauliflower. I still don’t like eating large pieces of cauliflower, but I have learned to really like the riced cauliflower.
Especially now that you can buy it in the freezer section….that makes life so much easier.

Yield: 5 servings (8 cauliflower tots per serving, 1 point per serving for blue and purple, 2 points for green)
- 12 oz. riced cauliflower (I used Green Giant Riced Cauliflower. I left it in the fridge overnight to thaw out)
- 2 eggs
- 3/4 cup reduced-fat cheddar cheese, shredded
- 1 tablespoon chopped chives
- 1 tablespoon minced onion
- 1 teaspoon garlic powder
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon pepper

Preheat oven to 400 degrees F.

In a large bowl, mix all of the ingredients together.

Spray a mini muffin pan with cooking spray. Using a tablespoon, fill the muffin pan with the cauliflower mixture.

Bake for 10 minutes, then flip over the cauliflower tots. Bake another 8-10 minutes or until the tots are golden brown.

It says 5 servings with 8 per serving. I would need two muffin tins for 1 batch? This shows one muffin tin.

If I use fat free shredded cheddar would these be 0 Points?

When you say flip, do you mean flip the over so you but them on a baking sheet?

They are baked in a mini muffin tin. I flipped each one, then put it back in the oven.
