The Ingredients
Chicken Breast: Chicken is an excellent source of lean protein. Protein helps build and maintain muscle, supports healthy body functions, and helps keep you feeling full and satisfied.
Carrots: Carrots are rich in beta-carotene, which the body converts into vitamin A. Vitamin A supports healthy vision, immune function, and skin.
Celery: Celery is low in calories and contains water, fiber, and antioxidants. It also adds flavor and texture to the soup.
Onion: Onions contain antioxidants and beneficial plant compounds. They also provide natural flavor, which helps make the broth taste delicious without needing a lot of extra ingredients.
Garlic: Garlic contains compounds that have antioxidant properties. It also adds a wonderful savory flavor to the soup.
Spinach: Spinach is packed with nutrients, including vitamins A, C, and K, as well as folate and iron. Adding spinach is an easy way to incorporate more leafy greens into your meal.
Cheese Tortellini: Cheese tortellini provides carbohydrates for energy and calcium from the cheese filling. It also makes the soup more satisfying and adds plenty of flavor.
Chicken Broth: Chicken broth adds flavor and moisture without adding much fat or calories. Choosing a reduced-sodium version can also help control the sodium content.
Fat-Free Half & Half: This is a lighter alternative to heavy cream. It gives the soup a creamy texture without needing a large amount of added fat.
Reduced-Fat Cheddar Cheese: Reduced-fat cheese adds calcium and protein while helping create a creamy, cheese broth.
Olive Oil: Olive oil contains monosaturated fats, which are considered heart-healthy fats. A small amount is all you need to saute the vegetables and garlic.

Frequently Asked Questions
Can I use frozen cheese tortellini instead of refrigerated?
Yes! Frozen cheese tortellini works well in this recipe. Just follow the package directions for cooking time. You may need to simmer the soup a little longer to make sure the tortellini is cooked through.
Can I use rotisserie chicken?
Absolutely! Rotisserie chicken is a great shortcut. Simply shred about 2 cups of cooked chicken and add it to the soup near the end of cooking. Since the chicken is already cooked, you can skip the step of browning and simmering the raw chicken.
How do I store leftover soup?
Store leftovers in an airtight container in the refrigerator for up to 3 days. Keep in mind that the tortellini will absorb some of the broth as it sits. Add a little extra chicken broth when reheating if the soup becomes too thick.
