The Ingredients

Light Butter: Light butter provides the buttery flavor needed to sauté the vegetables and make the flour-based soup base while generally containing less fat and calories than regular butter.

Yellow Onion: Onions add flavor without needing a lot of extra fat or sodium. They’re also a source of antioxidants and beneficial plant compounds.

Garlic: Garlic adds lots of flavor to the soup and contains sulfur-containing compounds that have been studied for their potential health benefits.

All-Purpose Flour: Flour helps thicken the soup and gives it that creamy consistency without requiring heavy cream.

Low Sodium Chicken Broth: Chicken broth creates the flavorful base for the soup. Choosing a low-sodium variety gives you more control over the amount of salt in the finished dish.

Shredded Carrots: Carrots add natural sweetness, color, fiber, and beta-carotene, which the body can convert into vitamin A.

Broccoli: Broccoli is packed with vitamins, minerals, fiber, and antioxidants. It also adds plenty of vegetables to this comforting soup.

Chicken Breast: Chicken provides lean protein, which can help make the soup more filling and satisfying. Using leftover or store-bought rotisserie chicken also makes this recipe incredibly convenient.

Lasagna Noodles: The noodles turn this soup into a heartier meal by adding carbohydrates and the familiar texture of lasagna.

Skim Milk: Skim milk adds creaminess and provides protein and calcium without the fat found in whole milk or heavy cream.

Reduced-Fat Sharp Cheddar: Sharp cheddar provides lots of cheesy flavor, so you don’t need an excessive amount to make the soup taste rich and satisfying. It also provides protein and calcium.

How to Make Broccoli Cheddar Chicken Lasagna Soup

Melt the light butter in a large soup pot or Dutch oven over medium heat. Add the diced onion and shredded carrots. Cook for 4–5 minutes, until the onion begins to soften.

Stir in the minced garlic and cook for about 30 seconds.

Sprinkle the flour over the vegetables and stir continuously for about 1–2 minutes. This cooks the flour and creates the base for the creamy soup.

Slowly pour in the chicken broth while whisking constantly to prevent lumps. Add the Italian seasoning, salt, pepper, garlic powder, and onion powder.

Break the lasagna noodles into bite-size pieces and add them to the soup. Bring to a gentle boil, then reduce the heat and simmer for about 10 minutes, stirring occasionally.

Stir in the broccoli and continue cooking for another 5–7 minutes, or until the noodles and broccoli are tender.

Stir in the shredded rotisserie chicken and skim milk. Cook for about 3–4 minutes, until everything is heated through. Don’t let the soup come to a hard boil after adding the milk.

Reduce the heat to low. Gradually stir in the shredded low-fat cheddar cheese until completely melted and the soup is creamy.

Taste and adjust the seasonings if needed. Serve warm.

Frequently Asked Questions

Can I use leftover chicken or rotisserie chicken?

Absolutely! Any cooked, shredded chicken works well in this recipe. Leftover baked or grilled chicken is a great option.

Can I use frozen broccoli?

Yes. Frozen broccoli works perfectly. You can add it directly to the soup, although you may need to cook it for a few extra minutes.

How do I keep the cheese from becoming grainy?

Keep the heat low when adding the cheddar and stir it in gradually. Avoid boiling the soup after adding the milk and cheese, as high heat can cause the cheese to separate.
