Creamy Chicken Pot Pie Casserole with Crescent Rolls
Chicken pot pie is one of those classic comfort foods that never goes out of style.
This Chicken Pot Pie Casserole takes all of those cozy flavors and turns them into an easy weeknight dinner that the whole family can enjoy.
This lighter version is also Weight Watchers friendly, with lean chicken breast, plenty of vegetables, and lighter dairy ingredients. It’s hearty, comforting, and satisfying without being as heavy as traditional chicken pot pie.

The Ingredients
Chicken Breast: Chicken breast is an excellent source of lean protein, which can help make a meal more filling and satisfying. It’s also relatively low in fat, making it a great choice for a lighter casserole.
Frozen Mixed Vegetables: Frozen peas, carrots, corn, and green beans make this recipe incredibly convenient while adding fiber, vitamins, minerals, and color. Using frozen vegetables also means there’s no need to spend time chopping several different vegetables.
98% Fat-Free Cream of Chicken Soup: Cream of chicken soup creates the rich, creamy base that makes this casserole taste like traditional chicken pot pie. Using a 98% fat-free variety helps keep the filling lighter than versions made with heavy cream or full-fat condensed soup.
Skim Milk: Skim milk helps thin the sauce and gives the casserole a creamy consistency without adding the fat found in whole milk or half-and-half. It’s also a source of calcium and protein.
Fat-Free Sour Cream: A little fat-free sour cream adds richness and a slightly tangy flavor to the filling. It helps create that creamy pot-pie texture while keeping the recipe lighter than one made with heavy cream.
Reduced-Fat Cheddar Cheese: Reduced-fat cheddar adds plenty of cheesy flavor while providing protein and calcium. You don’t need a large amount to make the casserole taste rich and satisfying.
Reduced-Fat Crescent Roll Dough: The crescent dough creates a golden, flaky topping that’s reminiscent of a traditional pot pie crust. Using it as a topping rather than making a full double crust keeps preparation simple and lighter.
Garlic Powder: Garlic powder adds savory flavor without adding significant calories, fat, or sodium. It’s an easy way to build flavor into the creamy filling.
Onion Powder: Onion powder gives the casserole another layer of savory flavor and works especially well with the chicken and vegetables.
Black Pepper: Black pepper adds a little heat and enhances the flavors of the chicken, vegetables, and creamy sauce.
Chicken Broth: Chicken broth adds savory flavor and helps create the right consistency for the filling. Using broth allows you to build flavor without relying on additional fat.

How to Make Creamy Chicken Pot Pie Casserole
Preheat oven to 375 degrees F. Spray a 9×13-inch baking dish with nonstick cooking spray.
In a large bowl, whisk together the cream of chicken soup, skim milk, sour cream, chicken broth, garlic powder, onion powder, thyme, salt, and pepper.
Stir in the chicken, frozen vegetables, and 1/2 cup of the shredded cheese.
Pour the mixture into the prepared baking dish and spread evenly.
Unroll the crescent roll dough and gently pinch the perforated seams together to seal them, creating one solid sheet of dough.
Carefully place the dough over the top of the casserole, stretching it slightly if needed to cover the entire surface. Tuck or press the edges down around the sides of the dish.
Bake uncovered for 25–30 minutes, or until the filling is hot and bubbling and the crescent topping is golden brown.
Let the casserole rest for 5 minutes before serving.

Frequently Asked Questions
Can I use leftover chicken?
Absolutely. This is a great recipe for using leftover cooked chicken or rotisserie chicken. Simply chop or shred the chicken before adding it to the casserole.
Can I use fresh vegetables instead of frozen?
Yes. Fresh carrots, peas, green beans, or corn can be used instead of frozen vegetables. Just make sure firmer vegetables such as carrots are cooked until tender before adding them to the casserole so they have enough time to soften.
Can I make Chicken Pot Pie Casserole ahead of time?
Yes. You can prepare the chicken and vegetable filling ahead of time and refrigerate it until you’re ready to bake. For the best texture, I recommend adding the crescent dough shortly before baking so the topping stays flaky and golden.
