Mini Lemon Cream Pies

These Mini Lemon Cream Pies combine an easy-to-make lemon pudding with crunchy pie crust. It’s perfect for a lightened up dessert.

If you don’t want to make the mini pies the lemon pudding is delicious on its own. And it’s low in points!

The small size of these pies makes them perfect for parties. They’re easy to handle and can be enjoyed in just a few bites.

The Ingredients

Pie Crust: There is no need to make your pie crust, you can use store-bought. It will help you save time and it’s easy to clean up.

Skim Milk: This is used to make the pudding instead of whole milk or cream. It’s a simple swap that helps to save points.

Cornstarch: Using this ingredient helps to thicken the pudding.

Granulated Splenda: Replacing sugar with sweetener helped to reduce the points significantly.

Salt: A pinch of salt brings out the sweetness in the other ingredients and creates a more balanced taste.

Lemon Extract: This helps to give the pudding its lemon flavor.

Lemon Zest: Adding a little lemon zest gives the pudding another boost of lemon flavor.

Fat Free Whipped Cream: Top each pie with a little dab of whipped cream for some added creaminess.

How to Make Mini Lemon Cream Pies

Preheat the oven to 350 degrees F. Spray a mini muffin pan with nonstick cooking spray.

Unroll the pie crust and use a 2″ circle cookie cutter to cut out 24 circles.

Press the pie circles into the mini muffin pan. Take a fork and lightly poke the bottom of the pies.

Bake the pie crusts for 13-15 minutes, or until they’re golden.

Add the cornstarch, Splenda, and lemon zest to a bowl and whisk together.

Pour the ingredients into a small saucepan. Slowly whisk in the milk over medium-high heat.

Continue to whisk until the mixture comes to a boil. Reduce the heat and simmer for 2-3 minutes while continuing to whisk.

Take the pan off of the heat and whisk in the lemon extract.

If you want the pudding to be yellow you can add some yellow food coloring.

Let the pudding cool before adding it to the pie crusts. Once the pudding is added top each pie with fat-free whipped cream.

Serving Suggestions

Garnishing each mini pie with a small piece of lemon zest or a mint leaf can add a pop of color and flavor.

Top each pie with crushed graham crackers for an extra level of flavor.

These pies can be made ahead of time but I would wait to add the pudding to the pies until they’re about to be served.
