Chicken Caprese Panini

The inspiration for this sandwich comes from a caprese salad, which I love!

A caprese salad is made with fresh mozzarella, tomatoes, and basil. It’s seasoned with salt, black pepper, and olive oil.

I wanted this sandwich to be Weight Watchers friendly so there’s a few things I did to keep it light.

The Ingredients

Bread: I made sure to use a low point bread. Aunt Millie’s Live Carb Smart White Bread is what I typically use.

Sometimes they’re out of it so I’ll use Sara Lee 45 calorie bread or anything else I can find.

Chicken: I used boneless, skinless chicken breast since it is 0 points.

It’s high in protein and low in fat and calories. On average one chicken breast has 43 grams of protein.

Fresh Mozzarella: This cheese is delicious. It’s a little higher in points than the cheese I typically use but it’s so worth it.

When fresh mozzarella melts it will give you a fabulous cheese pull.

Tomato: No caprese salad is complete without tomatoes. You’ll want to save this recipe if you have fresh tomatoes from your garden.

Basil: Fresh basil adds another layer of flavor to this sandwich. It needs to be fresh basil, not dried.

Balsamic Glaze: Although it’s not used in traditional caprese salads, many restaurants I’ve visited use it. For this sandwich it’s the perfect condiment.

I chose not to butter the bread to save points. Using a 0 point cooking spray on the panini maker will give you a crispy sandwich without the extra points.

How to Make a Chicken Caprese Panini

The first thing I did was cooked my chicken breast. I seasoned it with garlic powder, onion powder, salt, and black pepper.

I cooked the chicken in a nonstick pan for 3-4 minutes on each side. The chicken is fully cooked when it reaches an internal temperature of 165 degrees F.

While the chicken was cooking I sliced the fresh mozzarella. I used two slices of mozzarella that were .5 ounce each.

I use a food scale to make sure the points are accurate.

Once the chicken is fully cooked, add it to one slice of bread.

Top the chicken with tomato slices, fresh mozzarella, basil, and the balsamic glaze.

Put the other piece of bread on top of the basil.

If you don’t have a panini press you can also use an indoor electric grill. Preheat the grill on medium heat.

Spray the grill with cooking spray, place the sandwich on the grill and close it. Let it cook for 3-4 minutes, or until the bread is crispy.

Serving Suggestions

This panini is quite filling so I usually keep it simple when it comes to what I serve with it.

Baked potato chips are always a good option. I use my air fryer and they come out so crispy.

I also like a side of crispy vegetables with a low point dip. Celery sticks, baby carrots, and cucumber slices are all good options.

Ingredients
  • 2 slices Aunt Millie's Live Carb Smart White Bread (or other low point bread)
  • 1 fully cooked chicken breast (I seasoned mine with garlic powder, onion powder, salt, and black pepper)
  • 2 tomato slices
  • 1 oz. fresh mozzarella (cut into two slices)
  • 4-6 basil leaves
  • 1/2 tablespoon balsamic glaze
Instructions
  1. Preheat a panini press or indoor electric grill on medium heat.

  2. Lay out bread slices. Top one side with the cooked chicken breast, tomato slices, fresh mozzarella, basil leaves, balsamic glaze, and the other piece of bread.

  3. Spray the panini press with cooking spray and add the sandwich. Close the lid and cook 3-4 minutes or until it is crispy.
